Grilled Beef Fillet

Ingredients for 4 servings

  • 4 beef fillets (Wellgoods) about 200-250g each
  • 4 cherry tomato stalks
  • 1 tablespoon olive oil
  • Variety of steamed or boiled vegetables (your choice)
  • 4 bunches frisee lettuce
  • 2 cups red wine – Mavrodaphne
  • 2-3 cubes cold butter
  • Sea salt and pepper to taste

Method of Preparation

  • Heat a grilling skillet or the oven grill well, salt and pepper the fillets and sear both sides according to how well you like the meat cooked (medium, well done etc)
  • Place cherry tomatoes in a baking tray and add olive oil, salt and pepper and cook at 100°C for 15-20 minutes or until they become tender
  • Heat the wine in a small pan and allow it to slowly evaporate and reduce. Remove from heat and mix in the butter
  • Serve the fillets with the mixed vegetables, roasted cherry tomatoes and wine sauce
  • Garnish each beef fillet with a handful of frisee lettuce

Tip: Enhance the taste and appearance of the beef fillet (Wellgoods) by avoiding too much cooking and by complimenting the
flavours with herbs and spices.
